Aunt Libby’s Caramels

My great-aunt made the best caramels. Although she was not especially fond of cooking, she made a few things better than anyone else. Caramels were one of her specialties that no one else in the family made. It was always a treat to visit during the winter when she often had a supply of the wax paper wrapped treats on her enclosed, unheated porch.

These are not the easiest caramels I make, but their buttery flavor is beyond delicious and so worth the little extra effort.

Recipe: Libby’s Caramels

Ingredients:

2 c. sugar
a few grains of salt
1 1/2 c. light corn syrup
1/2 c. butter
2 c. evaporated milk
1 tsp. vanilla

Instructions:

Cook sugar, salt, and corn syrup to 275 degrees F.
Add butter and milk gradually, as not to stop the boiling.
Bring the mixture back to 245 degrees, stirring enough so that it does not stick or burn.
Remove from heat and add vanilla.
Quickly pour into a prepared 9 X 13 pan that has been lightly buttered.
When cool, score with a large knife and wrap in wax paper.
Store in a cool, dry place.
