Chocolate Cherry Bars

My mom started making these chocolate cherry bars in 1970’s. I recently discovered that was probably because it seems to be a version of a 1974 Pillsbury Bake-off recipe.

(Side Note: My cake did not turn out this time as pretty as I would have liked, but it tasted great.)

This was a cake that neither I nor my sister liked as kids. I think most of the issue was that the recipe called for Devil’s food cake mix…I don’t enjoy Devil’s food cake. So, I now make it using a German Chocolate cake mix (my husband’s favorite) and my family really likes it now (they were not as happy when I made the original version).

It is a super easy cake.

Recipe: Chocolate Cherry Bars

Ingredients

  1. 1 pkg. Devi’sl food or other chocolate cake mix
  2. 21 oz. can cherry pie filling
  3. 1 tsp. almond extract
  4. 2 eggs, beaten

Instructions

  1. Preheat oven to 350 degrees F.
  2. Mix all of the ingredients in a large bowl.
  3. Grease and flour a 9 X 13 or a half sheet baking pan. Bake for 30 to 35 minutes or until done.
  4. Apply icing while still hot.
  5. Allow to cool completely before serving.

Recipe: Chocolate Cherry Bars Icing

Ingredients

  1. 2 c. sugar
  2. 5 Tbsp. butter or margarine
  3. ½ c. milk
  4. 6 oz. pkg. semi-sweet chocolate pieces

Instructions

  1. Combine sugar, butter, and milk in a large saucepan.
  2. While stirring, bring to a boil over medium heat.
  3. Boil for one minute, stirring constantly.
  4. Remove from heat.
  5. Add chocolate.
  6. Stir until chocolate is smooth.
  7. Pour over hot/warm cake.
  8. Allow to cool before serving.

If you use the canned cherry pie filling with “more fruit” or home canned that has lots of cherries, use an additional egg in the batter.
