Cookie Crumb Pie Crust

Inspired to make a different type of pie crust for an amaretto cream pie, I decided to try and make a crumb crust using almond spice cookies. The result was delicious.

I have found that most crisp cookies work well in this basic, simple recipe.  I make either one deep dish pie or two standard dish 9-inch pies with this recipe.

Recipe: Cookie Pie Crust

Ingredients

  1. 2 c. cookie crumbs, (place cookies in a seal-able plastic bag and smash or a food processor to get crumbs)
  2. 1/3 c. sugar
  3. 1/2 c. butter, melted

Instructions

  1. Preheat oven to 375 degrees F.
  2. Combine crumbs and sugar.
  3. Add melted butter and mix thoroughly.
  4. Place into 1 deep dish pie plate or put half into 1 standard pie plate.
  5. Press to form crust on bottom and sides.
  6. Use a spoon to press where the sides meet the bottom to form transition and sides easier.
  7. Bake for 10 minutes max.

For variations try chocolate wafer, sugar, almond, ginger snaps, pecan sandies, vanilla wafers, and graham crackers (of course).
