Cranberry Topped Brie Cheese

A party just isn’t a party without cheese and crackers…at least in my mind. While the standard cheese cubes on crackers is okay, a festive presentation of a soft cheese topped with cranberries adds so much more to a celebration.

The creamy richness of warm brie cheese is complimented by the tartness of the cranberries and the warmth of spices in this easy, quick appetizer. It is delicious and addictive.

Recipe: Cranberry Topped Brie Cheese

Ingredients:

1 pkg. fresh or frozen cranberries
water
1 c. sugar
ground cinnamon, to taste
grated nutmeg, to taste
round of brie cheese

Instructions:

In a small saucepan, add cranberries, enough water to cover about half way, sugar, cinnamon, and nutmeg.
Bring to a boil and cook until cranberries have “popped” and mixture has started to thicken.
Preheat oven to 350 degrees.
Place brie round on parchment paper lined baking sheet.
Cut off top layer of rind, but leave it to cover cheese.
Bake for about 10 to 15 minutes or until rind top has come up at edges and brie has melted to desired consistency.
Transfer to serving tray/plate and remove top rind.
Top with cooled, but still warm, cranberry mixture.
(Can also be served on the side in a bowl and guests can top crackers with cheese and cranberry mixture of desired amount).
Serve with crackers, baguette slices, apple slices, etc.
