Homemade Fifth Avenue Candy

My sister and brother-in-law make these delicious candies every year and often give them away in Christmas gifts. This year I was lucky enough to get to make them with my sister…..you should not expect any as gift this year as I brought most of them home with me (well, minus what we ate on the long car ride home :))

Soooo….I decided I had better share how to make them in light of this year’s shortage.

Recipe: Fifth Avenue Candy

Ingredients

butter, enough to grease pan
18 oz. peanut butter
confectioner’s sugar, enough to coat pan
2 c. sugar
1 c. water
2/3 c. corn syrup

Instructions

Grease 10″ or 12″ skillet with butter.
Mound peanut butter in center of skillet.

Coat a cookie sheet with confectioner’s sugar.
Combine sugar, water, and corn syrup in a large sauce pan or pot.
Cook sugar mixture until it reaches the hard crack on a candy thermometer.

Pour sugar mixture over peanut butter in skillet and STIR LIKE MAD.
Immediately pour on prepared cookie sheet.
Immediately roll out/ smooth to 1/2″ to 1/4″ thickness.
Cut into rectangles with pizza cutter.

Let cool completely.
Coat with melted candy coating or tempered chocolate.

Notes

You need to move fast after the sugar mixture reaches hard crack until you get the candy cut with a pizza cutter; the candy hardens very quickly.

Merckens or similar chocolate melted in a double boiler or microwave works well for coating or dipping.

They really do taste a lot like Fifth Ave candy bars. Plus, they are fun to make with the family as the kids can help with dipping the centers into melted chocolate (obviously, the kids should not be around the kitchen during the molten sugar phase of making them).
