Old-Fashioned Rhubarb Cake

This old fashioned rhubarb cake is somewhere between a coffee cake, short-bread cake, and a sheet cake.
It is good for dessert or breakfast. It is great when served warm with whipped topping/cream, ice cream, or doused in milk.

As with most cakes, bring ingredients to room temperature before mixing for best results.
 

Recipe: Old Fashioned Rhubarb Cake

Ingredients:

  1. 1/2 c. shortening
  2. 1 1/2 c. brown sugar
  3. 1 egg
  4. 1 tsp. soda
  5. 2 c. flour
  6. 1 tsp. cinnamon
  7. 1 c. sour cream
  8. 1 tsp. vanilla or vanilla butternut
  9. 2 c. +/- diced rhubarb
  10. Topping:
  11. 1/2 c. sugar
  12. 1 tsp. cinnamon
  13. 1 Tbsp. melted margarine
  14. nuts, optional

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Creamed shortening and sugar.
  3. Add egg and beat well.
  4. Sift flour, soda, and cinnamon together.
  5. Mix sour cream and vanilla.
  6. Add alternatively to shortening mixture with sour cream mixture.
  7. Fold in rhubarb.
  8. Pour into a greased and floured 9″X13″ pan.
  9. Top with cinnamon, sugar, and butter.
  10. Sprinkle with nuts, if desired.
  11. Bake for 30 to 35 minutes or until tests done.
  12. Serve warm or cold.
