Simple Cheesy Broccoli Casserole

This classic Cheesy Broccoli Casserole is super simple, only requires a few ingredients, and is quick to make. Thus, I used to make this dish a lot for potlucks and guests when I was in graduate school and first working 😉

The recipe calls for Velveeta Cheese. If you don’t want to use a processed cheese, you can make your a cheese sauce instead by making a white sauce and adding cheddar cheese.

Recipe: Cheesy Broccoli Casserole

Ingredients:

20 oz. frozen broccoli, rinsed and drained
8 oz. Velveeta cheese, cut into small cubes
1 stack Ritz Crackers, crushed
4 Tbsp. butter

Instructions:

Preheat oven to 350 degrees F.
Melt butter in a skillet.
Add crushed crackers and stir until coated in butter.
Mix half of the crackers, broccoli, and cheese together in a 1 1/2 to 2 qt. baking dish.
Cover broccoli mixture with other half of buttered crushed crackers, covering entire dish evenly.
Bake until heated thoroughly and cheese is melted, about 25 – 35 minutes.
