Mandarin Orange Cake

A delicious, easy cake that is a great summertime treat is a Mandarin orange cake with its light, creamy pineapple frosting. Yum!

Even when you don’t stir the Mandarin oranges enough to break them up and they sink to the bottom of the cake, the cake is still very good. Although, it is harder to tell by looking that the cake contains Mandarin oranges as exemplified below. (What? Of course I did it on purpose to show you what could happen….lol.)

Recipe: Mandarin Orange Cake

Ingredients

1 French Vanilla or Butter cake mix
4 eggs, slightly beaten
1/2 c. canola or vegetable oil
11 oz. canned Mandarin oranges, not drained
8 oz. tub of Cool Whip, thawed
3.4 oz. (small box) instant vanilla pudding
20 oz. canned crushed pineapple, mostly drained

Instructions

Preheat oven to 350 degrees.
Grease and flour cake pan or pans. (13 X 9, or two 9 inch rounds)
Stir together cake mix, eggs, oil, Mandarin oranges, and their liquid. Break up orange segments into smaller pieces as you mix.
Pour into pan(s) and place in oven.
Bake according to cake box directions.
Allow to cool completely before frosting.
Combine Cool Whip, pudding and pineapple after cake has cooled.
Frost cake as desired.
