This old fashioned rhubarb cake is somewhere between a coffee cake, short-bread cake, and a sheet cake. It is good for dessert or breakfast. It is great when served warm with whipped topping/cream, ice cream, or doused in milk. As with most cakes, bring ingredients to room temperature before mixing for best results.
