Orange Cream Gelatin Dessert

Orange Cream Gelatin Dessert is an easy dessert that you can make from a few items in the pantry and freezer at any time of the year. It works well for Thanksgiving, Christmas, Mother's Day, bridal or baby showers, etc. It is sweet and rich, yet somehow also seems light and refreshing. It is a rather nostalgic dessert as it reminds me a little of an orange push-up ice cream treat from my childhood. Plus, it is a molded gelatin dessert, which always reminds me of the past. BBQ Quesadillas

Having leftover chicken or pork after grilling or barbecuing is wonderful. It means you have the opportunity to make some great dishes including Brunswick Stew and BBQ Quesadillas.

Inspired by one of my favorite dishes at one of my favorite barbecue restaurants, I started making bbq quesadillas with leftover take-out pulled pork…from the same restaurant. However, they can be made with pulled pressure cooker chicken, grocery store rotisserie chicken, crock pot pulled pork, grilled sliced pork tenderloin,…well, any cooked meat. Easy to make, quick, customized to your personal preferences, yummy…what else could you ask for?

 

Recipes: BBQ Quesadillas

Ingredients:

  1. Flour tortillas
  2. Pulled or sliced cooked chicken or pork
  3. Shredded Monteray Jack, Kolby Jack or other cheese
  4. Cole slaw
  5. Barbecue sauce
  6. Sour Cream (optional, on the side)

Instructions:

  1. Heat a cast-iron or non-stick skillet on med-low.
  2. Place flour tortilla in skillet.
  3. Spread chicken or pork on entire tortilla if using two tortillas or half if using only one tortilla.
  4. Cover with cheese.
  5. Add second tortilla or fold over tortilla.
  6. When first side starts to brown and/or cheese starts to melt, turn over.
  7. Cut into 3 to 6 pieces.
  8. Serve with sour cream on the side, if desired.
