Orange Cream Gelatin Dessert is an easy dessert that you can make from a few items in the pantry and freezer at any time of the year. It works well for Thanksgiving, Christmas, Mother's Day, bridal or baby showers, etc. It is sweet and rich, yet somehow also seems light and refreshing. It is a rather nostalgic dessert as it reminds me a little of an orange push-up ice cream treat from my childhood. Plus, it is a molded gelatin dessert, which always reminds me of the past. As with other gelatin and fruit dishes, someone might call this a "Jello salad" in the United States. However, this recipe uses an entire quart of orange sherbert in addition to gelatin, so I can not bring myself … Continue Reading about Orange Cream Gelatin Dessert

Easy Campfire Cooking: Banana Boats
A recent camping trip has inspired me to do a series of recipes that you can make over or in a campfire…or in a kitchen. Our last night camping, we had what I call a “foil dinner.” Each of our easy classic campfire dishes were cooked by wrapping them in foil and placing them in […]

Taco-in-a-Bag a.k.a. Walking Tacos
Summer brings fairs and festivals and the foods that you may only ever eat during those events. They are often foods that are relatively easy to eat as you walk/stand. Growing up in West Virginia, one of my favorite fair foods was the Taco-in-a-Bag, also known as the Walking Taco. I was a little surprised […]

Deep Dish Zucchini Crusted Pizza Casserole
Whether you are wanting a gluten-free pizza, to increase your vegetable intake, use up some of a bumper crop of zucchini, or to eat a really yummy meal, this deep dish zucchini pizza casserole may just be the ticket. Strawberry Soup
My seven-year-old daughter wanted to enter a soup/stew contest that they were having at church. Although she wanted to create her own recipe using some avocados I just bought, my husband talked her into making a recipe for cold strawberry soup he found somewhere on the Internet. She loves strawberries…so she agreed. They had to […]

Roasted Asparagus Frittata
Fresh asparagus + eggs + cheese = Yum. Whether for a weekend brunch or a weeknight dinner, a simple roasted asparagus frittata is a crowd pleaser. Lamb and Pasta Casserole
This lamb and pasta casserole is a result of me not having a plan for dinner, but needing something quick. I didn’t have enough zucchini to make Stuffed Zucchini, so I got a little creative. This dish is quick, easy and yummy. It is also really great without any zucchini…in fact, I think I like […]

BBQ Quesadillas
Having leftover chicken or pork after grilling or barbecuing is wonderful. It means you have the opportunity to make some great dishes including Brunswick Stew and BBQ Quesadillas. Inspired by one of my favorite dishes at one of my favorite barbecue restaurants, I started making bbq quesadillas with leftover take-out pulled pork…from the same restaurant. […]

Simple Cheesy Broccoli Casserole
This classic Cheesy Broccoli Casserole is super simple, only requires a few ingredients, and is quick to make. Thus, I used to make this dish a lot for potlucks and guests when I was in graduate school and first working 😉 The recipe calls for Velveeta Cheese. If you don’t want to use a processed […]

Mom’s Creamed Peas and Baby Potatoes
My mom loved creamed spring peas and baby potatoes fresh from the garden. She made the best that I have ever eaten. She did not fix them very often, which made them even more of a treat. Despite my best attempts to make them the same way she did, I can not get mine to […]

Mandarin Orange Cake
A delicious, easy cake that is a great summertime treat is a Mandarin orange cake with its light, creamy pineapple frosting. Yum! Even when you don’t stir the Mandarin oranges enough to break them up and they sink to the bottom of the cake, the cake is still very good. Although, it is harder to […]
