Freezer Pickles
My mom used to make a lot of pickles. When I was young, most of them were made in crocks and canned. As she and I grew older, she added some pickles that did not require the work of making pickles in crocks. My favorite of these pickles was her freezer pickles. They were one of my favorite snacks, especially when I first went away to college. I could get a couple of quarts from my parent’s freezer just before I headed back to college and they would be thawed, but still cold, when I arrived at my dorm a couple of hours later.
Freezer pickles are easily made of thinly sliced cucumbers, onions, and green peppers. These sweetly refreshing pickles make a great snack or sandwich topping.
