Orange Cream Gelatin Dessert

Orange Cream Gelatin Dessert is an easy dessert that you can make from a few items in the pantry and freezer at any time of the year. It works well for Thanksgiving, Christmas, Mother's Day, bridal or baby showers, etc. It is sweet and rich, yet somehow also seems light and refreshing. It is a rather nostalgic dessert as it reminds me a little of an orange push-up ice cream treat from my childhood. Plus, it is a molded gelatin dessert, which always reminds me of the past. Linguine Salad

Linguine salad was one of my mom’s summertime favorites. I’m not sure exactly when she started making it or where she acquired the recipe. I do know she loved to make it to use some of the many vegetables my parents grew in their garden. She also loved having family and friends to the farm for a picnic or cookout. Among the many dishes of food she would serve, you could usually find linguine salad.

Linguine salad does not contain anything that spoils easily, thus it makes a great picnic/cookout dish. Plus, it is super easy to make.

Recipe: Linguine Salad

Ingredients:

  • 1 lb. dry linguine pasta
  • salt (for pasta water)
  • 1 Tbsp. +/- McCormick Salad Supreme (spice section of your grocery store)
  • 8 oz. +/- zesty Italian salad dressing
  • 1 – 2 cucumbers, diced or chopped
  • 1 – 2 tomatoes, diced or chopped
  • 1 bell pepper, diced or chopped (optional)
  • 1 onion, diced or chopped (optional)

Instructions:

  1. Cook pasta in salted boiling water as directed until al dente.
  2. Drain pasta and rinse.
  3. Combine in a bowl with diced or chopped vegetables.
  4. Add salad seasoning and salad dressing.
  5. Mix well.
  6. Cover and refrigerate for at least 1 hour before service. It is best if it is refrigerated for several hours before serving.

Notes:

You many use any combination of any fresh vegetables you choose.

Number of tomatoes, cucumbers, etc. depend upon the size of each and amount you desire in the final product.
