Mom made this cake one year for my elementary school’s “Lawn Fete” and I really wanted it. I remember participating in the cake walk multiple times hoping to win it back. In the end, I went home with two cakes. One of them was indeed the cake my mom had taken to the school. She could not believe it. In fact, I don’t remember her being happy about it.
Recipe: 7-Up Layer Cake
Ingredients
- 1 box Duncan Hines lemon supreme cake mix
- 1 box instant lemon pudding mix
- ½ c. oil
- 4 eggs
- 1—12 oz. can 7-up
Instructions
- Mix first 4 ingredients—add 7-up and beat slightly.
- Pour into 3 layer pans, greased and floured.
- Bake at 350 degrees for 25 minutes.
7-up Cake Frosting
Ingredients
- 1 stick margarine
- 1lb. can crushed pineapple and juice
- 2 c. sugar
- 2 tbsp. flour
- 2 eggs
- 2 tsp. vanilla
- 7 oz. coconut
- 1 c. chopped nuts
Instructions
- Cook all but vanilla, coconut, and nuts for seven minutes after it boils or until thick.
- Take off heat, add vanilla, coconut and nuts.
- Beat slightly and put on cake layer.
Quick Notes
This is a very rich cake.
I only had two matching round pans, so I made the cake with just two layers. It was still very delicious.

Finally…I found the 7-Up Cake recipe my husband adored when we were newly weds.
I had lost my cards for several favorite recipes from the 1970’s and am thrilled to find a site that categorizes them by “eras”.

Yes…in fact, that is the way I usually make it. I usually use pans that are about 10 inches in diameter. I have also used 8 inch pans and not used all of the batter.

Do you use canned coconut flakes or a bag of shredded coconut for your frosting?

I use shredded coconut from a bag, but I remember my mom using coconut from a can in the recipe many years ago when coconut was not as readily available in bags.

Made this for Thanksgiving after not having made in 5 years; I don’t think my layers were very high. I made 3 but I didn’t think they were supposed to be thinish..the cake didn’t look as high as I remembered. Wonder what I did incorrectly?
