Orange Cream Gelatin Dessert is an easy dessert that you can make from a few items in the pantry and freezer at any time of the year. It works well for Thanksgiving, Christmas, Mother's Day, bridal or baby showers, etc. It is sweet and rich, yet somehow also seems light and refreshing. It is a rather nostalgic dessert as it reminds me a little of an orange push-up ice cream treat from my childhood. Plus, it is a molded gelatin dessert, which always reminds me of the past. As with other gelatin and fruit dishes, someone might call this a "Jello salad" in the United States. However, this recipe uses an entire quart of orange sherbert in addition to gelatin, so I can not bring myself … Continue Reading about Orange Cream Gelatin Dessert

Maple Glazed Roasted Sweet Potatoes
I was searching for something different than the everyday roasted/grilled sweet potato but not as “rich” as my mom’s glazed sweet potatoes or a sweet potato casserole when I thought of simply roasting sweet potato cubes in the oven like I roast other potatoes… with olive oil and salt. However, I prefer my sweet potatoes….well, […]

Stuffed Pepper Soup
I love stuffed peppers, but I need to make a confession: I love the stuffing much more than the peppers. In fact, I usually only eat a little of the pepper. I have tried making the stuffing without the peppers and it just did not work. It needed the pepper flavoring permeating the dish to […]

Pumpkin Dip
An easy dip for a fall or holiday gathering is this pumpkin dip. It just takes a couple of minutes to mix together and is ready to serve after it chills. It is simple and delicious.

Papa Gyro in Huntsville. AL
We had a little trepidation about eating Greek/Middle Eastern food so soon after a bad experience at one of our favorite local Middle Eastern restaurants, but we decided to risk it. After all, we do not get to Huntsville that often. Besides, we were there and we had not eaten lunch and it was getting […]

Homemade Hot Cocoa Mix
While many people may believe that a pumpkin spice latte the epitome of a fall beverage, to me it is a split between apple cider and hot cocoa. Their allure for me goes beyond just them tasting good; it is also in my memories of them. Hot cocoa (hot chocolate) brings back memories of high […]

Banana Chimichanga
Inspired by a dessert my daughter and I shared at a local Latin American restaurant that closed a couple of years ago. I decided to use some of an abundance of tortillas I had to make a tortilla wrapped banana dessert. As I only had my sketchy memory to go by, I decided to make […]

Roast Beef Manhattan a.k.a. Hot Roast Beef Sandwich
Whether you call it a hot roast beef sandwich, an open-face roast beef sandwich, or a roast beef Manhattan, it is warm, wonderful comfort food to me. Traditionally in my family, we referred to it as a hot roast beef sandwich. However, some menus of local restaurants listed it as an open-face sandwich. It would […]

Hobo Bread
Hobo bread may have originated in the 1930s with the transient workers who rode the rails in freight cars across the United States as reported by some. Even if it did not, it seems likely that this originated as a “poor person’s food” because it is known for being baked in a previously used can…usually […]

Warm German Potato Salad
My mom used to tell me that German potato salad was her favorite. As a young adult, she had boarded at the home of an older woman who had immigrated to the United States from Germany. I believe this is where she developed her affinity for the warm potato salad. My mom would rarely make […]

Clyde’s On Main
We celebrated our anniversary this year a day early by having lunch at Clyde’s on Main in Chattanooga. Although Clyde’s on Main has been open for a year, it was our first time there. It has a friendly, laid back atmosphere with a variety of seating options. The decor is eclectic. It has cocktail tables made from […]
