Orange Cream Gelatin Dessert is an easy dessert that you can make from a few items in the pantry and freezer at any time of the year. It works well for Thanksgiving, Christmas, Mother's Day, bridal or baby showers, etc. It is sweet and rich, yet somehow also seems light and refreshing. It is a rather nostalgic dessert as it reminds me a little of an orange push-up ice cream treat from my childhood. Plus, it is a molded gelatin dessert, which always reminds me of the past. As with other gelatin and fruit dishes, someone might call this a "Jello salad" in the United States. However, this recipe uses an entire quart of orange sherbert in addition to gelatin, so I can not bring myself … Continue Reading about Orange Cream Gelatin Dessert

Barbecue Beef Muffins
Putting barbecue sauced ground beef, cheese, and biscuits together in a muffin tin makes an easy alternative to a traditional sloppy beef sandwich. However, these barbecue beef muffins are easy to store, transport, and reheat making them a great item for next day lunches. The original recipe was in one of my compilation cookbooks. After […]

Baked Eggs in Muffin Tins
Baking eggs in muffin cups is such a simple concept that I just wonder why I did not know about it earlier. This technique uses little to no fat and makes an egg that can be a perfect fit for an English muffin or a Southern biscuit. Baked eggs are a great way to go […]

Chocolate Mousse a.k.a. Mousse Au Chocolat
I am not sure what prompted my fascination with a recipe for Mousse Au Chocolat (Chocolate Mousse) I found in the French section of my mom’s early 1960’s McCall’s Cook Book, but I find that, on some level, it still continues to this day. I started making it as a teen for my chocolate-loving dad […]

Mushrooms and Barley
A cold, rainy spring day seems better with a dish of hearty, but not too heavy, mushrooms and barely. Laden with fiber and minerals, this risotto-ish dish can satisfy both vegans and omnivores. Although reminiscent of risotto, I do not cook it exactly like a traditional risotto or even my orzo with mushroom risotto-ish dish. […]

Mom’s Old-Fashioned Vanilla Ice Cream
Have you ever left a partial carton of ice cream in a sink to melt so you could discard it only to find that it would not really turn into a liquid? Instead, the melted ice cream produced some liquid and a blob of a substance that did not look very appetizing. Moreover, it was […]

Berry or Cherry Angel Delight Dessert
Berry (or Cherry) Angel Delight is a delicious dessert that can easily be made without heating anything. Plus, this crowd pleasing dessert takes just minutes to throw together. It just needs to chill out for awhile in the refrigerator before serving. Thus, it is one of my go-to desserts. My mom would frequently make this […]

Amish Ham Meatballs
If you like the outer glazed area of ham loaf, you will love Amish-style ham meatballs. The ham meatballs have more glazed goodness plus the flexibility of being meatballs. While they can still be served as part of the main course, they also can be served as hors d’oeuvres. Inspired by several recipes in some […]

Beef and Homemade Noodles
Beef and noodles is a wonderful comfort food on a snowy, cold day. My mom would often make beef and noodles with leftover roast or beef that my parents had raised and canned. It was one of my favorite meals, but I remember picking out the noodles and leaving the beef behind much to Mom’s […]

Easy and Sweet Phyllo Tartlets
Little individual desserts not only are automatic portion control, they also are great for entertaining and cute. Plus, small desserts like phyllo tartlets allow you to easily offer options to accommodate a variety of food restrictions that are frequently encountered. These particular tartlets are vegan-friendly. Non-vegans need not be concerned because unless someone tells you, […]

Vegan Lemon Curd
Lemon curd has always been something of an enigma to me. It is tart yet sweet. It is light yet rich. It is complex yet simple. I decided to take my dairy-free version a step further and make it egg-free as well. The vegan-friendly version still tastes rather rich despite the omission of egg yolks […]
