Orange Cream Gelatin Dessert is an easy dessert that you can make from a few items in the pantry and freezer at any time of the year. It works well for Thanksgiving, Christmas, Mother's Day, bridal or baby showers, etc. It is sweet and rich, yet somehow also seems light and refreshing. It is a rather nostalgic dessert as it reminds me a little of an orange push-up ice cream treat from my childhood. Plus, it is a molded gelatin dessert, which always reminds me of the past. As with other gelatin and fruit dishes, someone might call this a "Jello salad" in the United States. However, this recipe uses an entire quart of orange sherbert in addition to gelatin, so I can not bring myself … Continue Reading about Orange Cream Gelatin Dessert

Textured Applesauce
I love the fall. There is cooler weather, less humidity, fall activities, and apples are in season. I love going to the orchard and buying fresh apples. They are good tasting and good for you. Early in the season or late, applesauce is always a good option. It is also one of my daughter’s favorites. […]

A Simple Meat Loaf
A standard in repertoire of many home cooks, meatloaf may not be sexy, but it can be good.

Skillet Stuffed Peppers
I must confess. . .I have changed the name of this recipe. It is from my Aunt Nina and it was titled “Stuffed Mangoes in a Skillet.” No, I have not changed one of the main ingredients. Green peppers were/are called mangoes in Eastern Pennsylvania, West Virginia, Ohio, and Indiana. They may have been/be called […]

Maple Baked Salmon
My daughter loves fish. Salmon is her favorite non-crustacean. Salmon is one of the few fish I actually like. So, I have learned to cook salmon beyond making salmon cakes. I tried several salmon recipes that did not quite fit my family’s tastes before taking flavors that we liked in some of the recipes and […]

Easy Pepperoni and Pasta Casserole
Whether it is a quickly prepared meal for a busy weeknight or a dish needed to take to a friend who is ill or had a death in the family, casseroles are my “go-to” dishes. Besides being comfort food, they usually reheat well and can often be frozen…a great benefit when things are hectic. The […]

Butterscotch Pudding Cake: Super Easy
This week is our first week of formal homeschooling at my house. Therefore, in honor of this week, I will be featuring some very easy, quick mix recipes. Life is short. Let’s start with dessert.

Simplify by Cooking Ahead: Chicken
I love chicken, but I also love quick meal preparation as well. I do not love precooked, frozen chicken’s taste or price. I used to love buying rotisserie chickens for the same price as raw. I also loved that they tasted better than what I made at home for cold chicken recipes. I used them for […]

Pineapple Upside Down Cake
My favorite use of an iron skillet is to make this cake. It is best when served very warm, NOT HOT. (We always have trouble waiting until it cools enough). However, this cake needs to be served warm from the oven. It is not nearly as good after it is totally cool.

Homemade Noodles
If you are hoping I am going to share my mom’s noodle recipe, I am – Reames Frozen Homestyle Egg Noodles. Really, that was it. She rarely made her own noodles after finding Reames in the 1970’s. Yes, she did make them on rare occasion, but I am not sure what recipe she used. I […]

Lamb Burgers
Want a break from regular hamburgers or is there a good sale on ground lamb? Try these lamb burgers. I combined ingredients from a couple of different recipes to come up with this one we like.
