Pork Tenderloin with Broccoli and Noodles

The pork tenderloin coated in a delicious sauce with just a hint of sweet and a hint of heat almost melts in your mouth when you eat this quick, filling single dish meal.
Although pork tenderloin may not be the least expensive cut of pork, this dish is very budget-friendly with only a pound of tenderloin making enough to feed six people.
Pork Tenderloin with Broccoli and Noodles
Ingredients
- 1 pkg. wide noodles
- 1 pkg. frozen broccoli (or fresh)
- 1 Tbsp. olive or canola oil
- 1 lb. pork tenderloin, sliced thin
- salt, to taste
- 1 Tbsp. garlic, minced
- 3 green onions, cut into pieces
- 16 oz. chicken stock or broth
- 2 1/2 Tbsp. corn starch
- 1/3 c. soy sauce
- 1/4 c. honey
- pinch of red pepper flakes (optional)
Instructions
- Cook noodles in salted water adding broccoli during the last few minutes of cooking time. Drain when done and keep warm.
- Meanwhile, heat oil in large skillet.
- Add pork and cook on med-high to high temperature until almost done.
- Move pork to one side and add onions and garlic and cook until onion is tender.
- Mix 1/3 c. chicken stock and corn starch in small bowl to create a slurry.
- Add slurry to skillet stirring constantly.
- Add rest of chicken stock.
- Mix honey and soy sauce until well blended in the small bowl.
- Add soy mixture to skillet.
- Plate noodles and broccoli adding pork and sauce to the top.
- Serve warm.
Notes
You can also mix all the finished ingredients in a large dish to coat the noodles more evenly with the sauce. Then serve from the dish.
