Orange Cream Gelatin Dessert is an easy dessert that you can make from a few items in the pantry and freezer at any time of the year. It works well for Thanksgiving, Christmas, Mother's Day, bridal or baby showers, etc. It is sweet and rich, yet somehow also seems light and refreshing. It is a rather nostalgic dessert as it reminds me a little of an orange push-up ice cream treat from my childhood. Plus, it is a molded gelatin dessert, which always reminds me of the past. As with other gelatin and fruit dishes, someone might call this a "Jello salad" in the United States. However, this recipe uses an entire quart of orange sherbert in addition to gelatin, so I can not bring myself … Continue Reading about Orange Cream Gelatin Dessert

Amaretto Cream Pie
A few years ago, my husband insisted we go to the Mt. Vernon Restaurant in Chattanooga, Tennessee for my birthday. As it had always been our tradition for the birthday person to pick the restaurant, I was not happy about going…to say the least. To try and calm me, he explained he had been there […]

Authentic New York Style Pizza in TN? New York Pizza Department
The NYPD: New York Pizza Department has brought authentic New York style pizza to the Chattanooga, Tennessee area. Their Neapolitan pizza is a 24-inch pie that has to be folded a little to fit in the to-go box and has enormous slices. Most importantly, it has a great texture and taste. Located in a strip […]

Mini Smoked Salmon Frittatas
My daughter loves salmon. When it is not in season (oh yeah…I don’t buy fresh farm raised salmon, a personal preference) I often buy smoked salmon from a large warehouse store and it is more than we use in one (or two or three) meal(s). Although my daughter likes to eat it plain, I like […]

Bear (Delaware) Burgers
Several years ago, my husband and I had a sandwich from a pizza and steak shop in Bear, Delaware that they called a “Bear Burger.” Unfortunately, the shop went out of business, and we have never found any place that served anything like them. Although I really am not sure why, we started talking about […]

A Better Chicken Salad
It seems I have been making chicken salad quite frequently lately. Not only does everyone like it, but it is simple to make from store-bought rotisserie chicken, leftover herb roasted chicken or other recipes, or quickly cooked chicken in the pressure cooker. Additionally, I now included healthier ingredients like ground flax, sliced almonds, and sometimes […]

Herb Roasted Chicken Breasts
Can you get crisp, moist, flavorful, and tender roasted chicken breasts without marinating or brining them? In short, yes. The easiest way is by using chicken breasts with the bone in and the skin on. I think the real key is making sure the oven temperature is high enough to brown and crisp the skin […]

Simple Cucumbers and Onions
This super simple mixture of cucumbers and onions is a refreshing and delicious dish. My mother and grandmothers would often serve it from as soon as the cucumbers ripened in the summer through the early fall. Today, I often make it using the “hot house” or “hydroponic” cucumbers available in supermarket all year round. In […]

Watermelon Sorbet
You can plant a watermelon up above my grave, And let the juice (slurp) ooze through, You can plant a watermelon up above my grave, That’s all I ask of you. These lyrics are part of my favorite song…when I was six. So, why am I quoting a song I learned in first grade? Well, […]

Wally’s Restaurant in Chattanooga
Wally’s is an old-school restaurant that has a loyal following, good food, and great prices. Although there is another location in nearby East Ridge, Tennessee, I have only been to the McCallie Avenue location in Chattanooga. It is a great place to have breakfast. Not only is breakfast served from 6 – 11 a.m., they […]

Excellent Pressure Cooker Beef Roast
When I was young, Sunday dinners seemed to include either a chicken or a beef roast. They both required longer cooking times and were more expensive than the usual nightly weekday meals. Plus, it was then a treat and something to look forward to after church. They were not quite equal in my eyes, though. […]
