Orange Cream Gelatin Dessert is an easy dessert that you can make from a few items in the pantry and freezer at any time of the year. It works well for Thanksgiving, Christmas, Mother's Day, bridal or baby showers, etc. It is sweet and rich, yet somehow also seems light and refreshing. It is a rather nostalgic dessert as it reminds me a little of an orange push-up ice cream treat from my childhood. Plus, it is a molded gelatin dessert, which always reminds me of the past. As with other gelatin and fruit dishes, someone might call this a "Jello salad" in the United States. However, this recipe uses an entire quart of orange sherbert in addition to gelatin, so I can not bring myself … Continue Reading about Orange Cream Gelatin Dessert

Ruben Casserole
About a year ago, I saw a demonstration at a “cooking school” for a Ruben casserole. I decided to make it for my family the next week and used the recipe I received at the event. It was rather dry and not very tasty. I ended up throwing most of it out. Although it took […]

My Best Meatball Sandwich
My husband used to joke that I was a great cook as long as I did not try to used a recipe. Unfortunately, he was right to some extent. I have made a few errors reading a recipe and do much better cooking (not baking or candy making) when I do not use a recipe […]

Quick and Easy Cherry Turnovers
In honor of National Cherry Pie Day, I decided to share one of my favorite quick and easy desserts, cherry turnovers. (A turnover is a folded pie, isn’t it?…Okay, I am stretching the occasion to fit what I have already made). What makes them super easy is that I use frozen puff pastry dough and […]

Nikki’s Drive In
UPDATE: Nikki’s announced that they have accepted an offer from a real estate developer and will be closing. There will be condos/apartments built where the restaurant stands. On a ridge overlooking downtown Chattanooga and the trendy area of North Shore sits Nikki’s Drive In. Although it is geographically close to the North Shore, it is […]

Kale with Raisins and Cranberries
Kale is not only a “super-food,” it also seems to be super popular right now. It has a bitterness to it sometimes, so it has not been my favorite green. However, I do love its nutritional values! If you get it straight from your garden or your local farmer’s market, it is less likely to […]

Cream Horns
Surprisingly simple to make and sinfully delicious, cream horns are a very special treat. One of the reasons cream horns are such as special treat to me is that they remind me of my father. He had such a “sweet tooth.” He would bring home a half a dozen cream horns from a bakery or […]

Dairy-Free Potato Soup
I thought I would share one of my new favorite soups–a potato soup. Granted cream of potato soup and loaded potato soups have always been some of my favorite soups, but this soup is different. This potato soup is not a cream of potato soup and it does not use any dairy substitutes. It does […]

Chili with Bison and Beans
Living in the eastern half of the United States, what used to be called buffalo is almost always referred to as bison now. However, I discovered while traveling in the western half of the United States several months ago that bison is still often referred to as buffalo. This difference has totally confused my six-year-old […]

Beer Cheese Dip
I have been trying to recreate a beer cheese dip/sauce that one of my favorite German restaurants serves. My latest version turned out to be very tasty! The mixture of the different cheeses along with a light flavor of an ale really worked. One of the keys to a smooth cheese sauce is to slowly […]

Pretzel and Honey Chicken Tenders (or Nuggets)
This recipe is a result of my planning to enter a chicken recipe contest. Although I never got around to actually entering the contest, my work on the recipe was not lost as it is a big hit with my family. These are on my Super Bowl day menu. When served with beer cheese dip […]
