Orange Cream Gelatin Dessert is an easy dessert that you can make from a few items in the pantry and freezer at any time of the year. It works well for Thanksgiving, Christmas, Mother's Day, bridal or baby showers, etc. It is sweet and rich, yet somehow also seems light and refreshing. It is a rather nostalgic dessert as it reminds me a little of an orange push-up ice cream treat from my childhood. Plus, it is a molded gelatin dessert, which always reminds me of the past. As with other gelatin and fruit dishes, someone might call this a "Jello salad" in the United States. However, this recipe uses an entire quart of orange sherbert in addition to gelatin, so I can not bring myself … Continue Reading about Orange Cream Gelatin Dessert

Roasted Cauliflower
My mom was a great cook; however, her boiled cauliflower with butter was not very tasty. She rarely served it with cheese sauce (the only way I could get my husband to agree to eat it for a while) thus, I preferred to eat it raw. I wish my mom had known about roasting cauliflower. […]

Kale with Raisins and Cranberries
Kale is not only a “super-food,” it also seems to be super popular right now. It has a bitterness to it sometimes, so it has not been my favorite green. However, I do love its nutritional values! If you get it straight from your garden or your local farmer’s market, it is less likely to […]

German Home-Style Red Cabbage
I found a cookbook in the library called The Cuisines of Germany by Horst Scharfenberg. After reading just a few pages, I was hooked. Despite it being out of print, I managed to track down a copy on the Internet. It is now among my favorite cookbooks in my collection. The region where I currently […]

Make-Ahead Mashed Potatoes
It is a great help to be able to make some side dishes ahead of time whether you are serving a large crowd, a holiday meal, or even a small family dinner. It is even better when those sides are simple to make and loved by kids. My version of mashed potatoes that can be […]

Fried Green Tomatoes
As the summer growing season would end, my mom would make fried green tomatoes. During the summer, she wanted the ripe tomatoes to can, freeze and eat. However, as the season shortened, she would use the green tomatoes to dill, fry and even can to make fried green tomatoes in the winter. She always made […]

Versatile Black Beans and Corn
What do you serve as a side dish for tacos? On the rare occasion when we make them at home, I would end up serving just the tacos and some fruit. However, I needed to make a side for a taco dinner at a church, so I came up with my own variation of the […]

Braised Baby Bok Choy
In attempt to use the last of the massive amount of baby bok choy I purchased, I decided to put my own spin on braising them. They turned out tender, yet firm, and had a light, slightly sweet taste. The addition of a few red pepper flakes gives it a slight warmth as well, but […]

Fried Summer Squash
My mother use the same technique to fry squash and green tomatoes. Simple, yet tasty. I like my very well done. I also like to cut some of the slices very thin and make almost a crisp out of them while I like to keep others thicker to have the sweet, creamy squash flavor. It […]

Grilled Baby Bok Choy…Yum!
Grilling fresh vegetables seems to transform them into something wonderful… I could not resist how great the cute baby Bok Choy looked in one of those giant warehouse stores yesterday. Thus, I ended up with lots of baby Bok Choy. Tonight, I decided to try some on the grill. Baby Bok Choy has a rather […]

Cooked Yellow Summer Squash
My paternal grandmother and one of her sisters both laid claim to the ownership of the family’s cooked summer squash recipe. In fact, I know that her children still believe that it was my great aunt’s recipe. My grandmother used to contend that her sister first got the recipe from her … My best guess […]
